Frequently Asked Questions

What is the difference of White and Yellow Corn?A: There is not much of a difference between the white and yellow corn that we use in our milling. The quick & easy answer is that the main difference is the color of the corn; but there is a very slight taste and nutritional value difference between the two. The white grits & cornmeal come from grinding white corn and the yellow grits & cornmeal come from grinding yellow corn. The texture of the corn kernels used and the product that is produced are the same, the two are interchangeable in recipes, and there is a slight difference in the taste & nutritional value. The white corn tends to have a milder taste and contains a bit more sugar content, while the yellow corn may be a tiny bit sweeter and it contains beta carotene (the yellow in the corn) that turns in to Vitamin A during digestion. White grits is the largest seller. We produce & sell much more white grits than yellow.
